As a ex-professional cook, I can appreciate a good quality knife and this is good
As someone who used to cook everyday in a well-regarded local restaurant for years, I know my way around a knife. This is a good value for a German knife but maybe a little pricey for a “regular” kitchen knife. I was intrigued by this knife’s shape, so I took a chance and ordered it. Turns out to be a good choice. This is an interesting and useful knife. It occurred to me that it might make a good gift for someone who “has everything”. The curve of the blade makes it so that the balance point is way back on the blade end (see in the pictures where the knife naturally sits on the blade, that’s the balance point). So it makes chopping and prep very convenient by rocking the knife back and forth in a motion very similar to using a regular 8″ chef’s knife. That’s the main innovation here, the curve and balance of the blade. The colorful handle is amusing and sticks out among my other dour German knife handles in the knife blocks. I would buy another knife from this company again, even though stainless steel knives are harder to sharpen.

Sharp! Cool Looking!
With the edgy color design on the acrylic handle and sabre like shape, it looks a bit like a prop out of a John Wick movie. Very sharp, I would even say that I’ve never had a knife this sharp when new, and I’ve had some pretty high end knives. Having learned on a western chef’s knife, and having used a variety of asian style knives, the curve on this knife makes it different to use than any knife I’ve had before. With other knives you put the front point on the cutting board and chop in the direction towards your body, which gives you good leverage. With this knife that’s impossible, and it would even seem that to follow the curve and weighting of the knife that you’d go in the opposite direction, which seems awkward. For other types of cutting this knife does excel, and the quality does seem to be top notch. Maybe I just need a lesson on how to use this design?

Really good knife.
Giesser is an old German knife company that most of us have never heard of. That’s because they have mostly stayed in the less high end commercial restaurant side of the business. This knife is an example of why they need to be in the retail space. It is razor sharp, well made, and the acrylic handle looks and feels amazing. This is a classic German blade meaning that it is tough. Unlike many of the Japanese knives out there, this knife will happily chew through bone and cartilage without concern of chipping. Just get after that bird! I also really like the shape here. It is more manageable. For $140, this is an easy recommendation. I will be back for more from Giesser.

Very impressive knife
We own several quality chef’s knives, most of them German, but did not have one of this style. With a major garden harvest beginning, I decided to try this rocking-style knife on a batch of vegetables for processing. With the rocking motion of cutting and the sharpness of the blade, I was able to convert this basket of sweet peppers from whole to chopped and freezer-ready in under 10 minutes, much less time than with a standard chef’s knife. This knife is beautifully crafted, as you would expect from a German knife, and the chrome-moly 15 blade is sure to stay stainless forever. The balance is excellent, equally for my small hands and for my husband’s extra-long hands. After the peppers, I went on to slice tomatoes for the food dryer and the blade kept its edge all through. I’m sure that when we’re in full harvest, we’ll be using this knife daily and will probably need to sharpen it often, but that’s the case with all our good knives; they get a lot of use this time of year and this will fit right in as a highly efficient and essential tool.

Beautiful knife; looks like a sword.
“I am not a knife expert. I don’t know anything about hardness scales or angles or anything else of that nature. But I am a bit of a knife collector. I spend a lot of time in the kitchen, and having a good knife is so important. This knife is nicely weighted but not so heavy that it is cumbersome to hold. The texture of the handle feels nice and secure in the hand. I’ve used it to cut firm root vegetables without any problem, as well as to chop other things (onions, peppers, meat) and it works nicely and was sharp out of the box without requiring any sharpening. The rounded blade is great if you’re one who rocks your knife, and while I’m more of an up-and-down chopper, this knife rocks smoothly and I’m becoming accustomed to the motion required to successfully chop. The knife is gorgeous and kind of looks like a weapon a ninja would use (I think ninjas use weapons).
The knife is priced higher than some, but if you are looking for a good knife that looks like a piece of art, this is a great choice.”

AMAZING!!
I’ve been knife collector since I was a kid, many decades ago. When I had the opportunity to review this knife I jumped at it!! Giesser is a fine quality German knife company that provides top quality knives to chefs/restaurants around the world. I worked as a sous chef in steak houses to help put myself through college. I’ve never had any Giesser knives but am well acquainted with their quality. Out of the box, this thing is BEAUTIFUL!! The handle is a work of art. The feel is extremely balanced and the curved edge makes it my new go to knife for daily chopping, etc. Absolutely incredible daily use knife!!!

A fantastic knife so far
“Keep in mind this review is only after approximately a week with this knife. I will update if for some reason this knife fails or wears out too quickly, but so far so good.
This knife is an all around-er that can take on a variety of chopping and cutting tasks in the kitchen. The curve to the knife makes chopping nice and easy and the weight of the knife is noticeable but not excessive. The knife balance point is right where the handle and blade connect which is a nice sweet spot. The blade out of the box comes very sharp and ready to cut. They rate the blade at a 57 +- 1 on the Rockewell scale which is right where it should be. Any lower and the blade might dull quicker, any higher and the blade might chip and break. Both the blade and the handle exhibit beautiful craftsmanship. The handle is made of an acrylic that is quite beautiful and unique to each manufactured knife according to Giesser.
I think it’s also worth mentioning the brilliance of the packaging this knife came with. The knife is simply packed in a cardboard box with a plastic sleeve to protect the blade, wrapped in a towel which acts as the packing material to protect the knife from bumps during shipping. Everything inside of the box is reusable and it avoids throwing away needless plastic.
My biggest concern when ordering this knife was the reputation of Giesser as I had never heard of the company. After doing some research into them they seem very reputable and knowledgeable when it comes to manufacturing knives. Aside from using advanced technology to make their knives, their knives are finished and inspected by hand. It certainly appears to be a company that knows what they are doing.
Overall this is a fantastic knife for anyone looking to upgrade their cutting experience in the kitchen. I would recommend learning how to sharpen knives properly as well as hand washing this knife, as it deserves that respect. If taken care of properly, I’m sure this knife will provide a fantastic cutting experience for many years to come.”

What a beautiful knife!
This knife appears to check out quite well. It feels nice and looks amazing. It comes with a hand towel and sheath which is great! I don’t know much about the composition of the blade, but it feels sturdy and it seems sharp enough for everything I’ve used it for.

Looks beautiful and performs well.
This has quickly become my favorite chef’s knife. I like the weight and feel of it in my hand and it’s performance is the best. This knife produces clean, sharp cuts that leave my other knives sitting in the holder. I love the “spicy orange” design of the handle, which makes it the most beautiful and unique knife in my collection.
